We continued with our Kitchen Chemistry unit today and we mixed oil and water. We found that they would not mix until we added detergent. There was a lot of discussion as we tried to discover why. We then learnt some beautiful scientific words that helped to explain everything. Oil is hydrophobic, water is hydrophilic while detergent is amphiphilic. We were so excited by this and even tried to act it out.
